
Here are the ingredients I am using.

First I put the dried chilies in a pot of water,
And bring them to a boil...

Add onion and garlic,
continue boiling.

Remove stems and some seeds
then blend it together.

Put back on stove, simmer.

In the meantime, in a couple of tablespoons of olive oil,
toast a package of sesame seeds and a pinch of cumin seeds.

Grind the toasted seeds in a metate until it is a paste.
(Or you may use 2 Tablespoons of peanut butter)
Add to pot and continue to simmer.

Lastly, add the secret ingredient!
Make sure the chocolate is at least 75% cocao.
90% is the best. Add 1/2 package until it melts in the red MOLE.
