This is How I am
I started my healthy diet 4 weeks ago.
So How Am I?
I do have more energy, however, I caught a bad, bad, cold...
with a deep chest cough...(lasted 2 weeks and is threatening a relapse!)
I also went to the Dentist, several times, for a deep cleaning, root canal and crown.
I'm sure that stirred up alot of bacteria and germs making my immune system weaker.
So...I am now feeling better, I have my energy back, painted my kitchenette,
Planted some succulents and am preparing to plant some flowers.
My iris' are blooming beautifully... and the birds are singing every morning.
Sadly, Dennis caught my terrible cold, so I am now nursing him back to health.
So, as far as my diet plan, I believe this terrible cold would have been worse,
if my body had to fight this cold and process wheat, dairy and sugar.
I feel lighter, I do not crave sugar anymore.
But my clothes are still tight, so... I will be including some exercises in my routine.
(Had to hold off on exercise while getting well)
Hopefully, I will be back on track in no time.
And I will let you know how things are progressing in the next 4 weeks.

Curried Vegetables with Lentils.
I enjoy making East Indian food.
This recipe is one of my favorites,
it is a dry curry.
2 tsp coconut oil
1/2 tsp. mustard seeds
pinch of asafetida (hing)
1 Tbl green chili, minced, bell pepper
(If you like a hot curry, use a jalapeno)
1 small cauliflower, cut into fine florets
1/4-1/2 tsp. sea salt
1 tsp. coriander powder
1/8 tsp turmeric
1 Tbl water
1 1/2 cups frozen petite peas
3 Tbl. coconut, finely grated
2 Tbl. fresh cilantro, finely chopped
Juice of 1/2 small lime/
1/2 tsp. mustard seeds

3 Tbl. coconut, finely grated
2 Tbl. fresh cilantro, finely chopped

In a large saucepan with lid, heat oil. Add mustard seeds, asafetida, and green chili or bell pepper. Add cauliflower. Cover and dry-steam over very low heat, adding sea salt, coriander, and turmeric as vegetables cook. Stir frequently. Add water if vegetables begin to stick. Cook 5-10 minutes, stirring frequently until cauliflower is tender. Add peas, mix well and cook for 3-4 minutes longer. Stir in coconut, cilantro, and lime juice. Mix well and heat gently for a few minutes. Serves 3-4
Flax seeds are tiny but mighty!
Though not a grain, they have a similar vitamin and mineral profile to grains.
The amount of fiber, antioxidants and and Omega-3 fatty acids in flax seeds, leave grains in the dust!
Flax seed is low in carbohydrates. The combination of healthy fats and high fiber make it a great food for weight loss and maintenance.
Flax seed is high in most of the B vitamins.
Glyco-lyph is a formula which combines adrenal, pituitary, and parotid glandular support with vitamins, minerals and nutrients all working together which help to contribute to blood sugar maintaining a condition of equilibrium or stability. Chromium has an important role in the Basic Function of Glucose Tolerance Factor. GTF facilitates the transport of glucose across cell membranes, enabling cells to use the glucose for energy production. The B vitamins are all involved in the aspect of glucose metabolism.

Power Breakfast for Me!
I eat oatmeal nearly every morning!
It is suppose to be good for lowering cholesterol
I add raw mixed nuts, ground flax seed and dried cherries.
A little coconut milk!
With strawberries on the side, this is a good start of my day!

Hot Soup for a Cool Night, Malaysian Style
Spicy Malaysian Soup
2 T. coriander seeds
1 tsp each black peppercorns, cumin seeds, and fennel seeds
4 cloves
¼ tsp. ground tumeric
5 to 8 dried arbol chilies, stemmed
2 lemongrass stalks
3 T. coconut oil
1 lb. chicken thighs, skinned
1 T. fish sauce (or shrimp paste*)
2 carrots, julienned
2 zucchini, julienned
3 large shallots, thinly sliced
2 large garlic cloves, thinly sliced
2 T. fresh ginger, minced
1 qt. chicken broth, gluten free
1 can (13.5) coconut milk
3 tsp kosher salt
1 cinnamon stick
6 oz. mung bean sprouts, rinsed
8 oz. wide rice noodles
1/3 cup each of fresh mint, cilantro, and Thai-basil leaves
Lime wedges
1 red jalapeno, halved and sliced
Sambal oelek chili paste*.
Grind coriander, peppercorns, cumin, fennel, cloves, turmeric, and chiles coarsely in a spice grinder. Peel tough outer layers from lemongrass, then mash core with a meat mallet or small, heavy frying pan.
Heat oil in a large pot over medium heat. Add chicken, fish sauce, shallots, julienned vegetables, and reserved spices and cook, stirring constantly, until fragrant, 2 minutes.
Pour in coconut milk, broth, and salt; add cinnamon and lemongrass. Bring to a boil, then simmer, covered, 20 minutes.
You may boil bean sprouts in a large pot of boiling water until softened, 2 min. Transfer sprouts to a bowl. (I did not do this)Add noodles to pot and cook until firm, 4 minutes. Drain; rinse well. (I left out noodles)
Divide sprouts and noodles among 6 bowls. Ladle in soup (remove cinnamon and lemongrass) and top with mint and cilantro, and Thai-basil and jalapeno. Serve with limes and sambal.
*Find in the Asian aisle of a well-stocked grocery store or at an Asian market.
Inositol = Promotes hair growth, lowers cholosterol levels, Pormotes healthy brain cell growth and function. Removes fat from liver and heart. Helps in treatment of diabetes and used to balance depression disorders.
Cataplex B12= Supports healthy development of red blood cells. Supports healthy nervous system and skeletal system function. Promotes healthy cellular function.
Zinc Liver Chelate= Supports heathy immune function at the cellular level.
Maintains cellular health.

Break fast on new diet
Wheatfree pancakes!
(mostly rice flours)
I use coconut oil to grease frying pan, then
I put sliced bananas on top of pancake, then turn it over,
the bananas sweeten and carmelize a little.
When pancake is done I top it with fresh raspberries (my favorite)
and Agave syrup (less sugars than maple syrup)
This is sooooo yummmy!
