Lake Hodges & Friends from Texas!
Our friends who came from Texas!
These are our friends from Encinitas,
with whom our Texas friends stayed with.
We had baked salmon, true bleu salad, watermelon,
hummus with fresh veggies and stress free herbal tea.
And the some of the best company ever!
And we had one lone duck who was very friendly,
we enjoyed her company
And she enjoyed our watermelon!
This is close to what our True Bleu salad looked like!
It was soooo gooood!
This recipe is for you, Mom!
True Bleu Salad:
1/4 cup blueberry (or raspberry) vinegar
2 Tablespoons walnut oil or extra virgin olive oil.
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
4 cups torn mixed greens
1 cup fresh blueberries
1/2 cup walnut halves, lightly toasted
1/4 cup crumbled Stilton or Blue Cheese (1 ounce)
2 Tablespoons snipped fresh chives or thinly slices green onion tops
Fresh blossoming chives or borage blossoms (optional)
For dressing: in a screw-top jar, combine Blueberry Vinegar, walnut or olive oil, salt, and pepper. Cover and shake well. Chill, if desired. Makes 1/3 cup.
Combine greens, blueberries, walnut halves, cheese, and snipped chives or green onion tops in a large bowl. Pour half of the dressing over salad. Toss lightly to coat. Add more dressing if desired. garnish with fresh blossoming chives or borage blossoms. Makes 4 side dish servings.
