Aloo Gobhi (Potatoes and Cauliflower)
This vegetable dish is made slowly with curry powder and other fragrant seasonings.
Thanks to Prerma at Indian Simmer we enjoyed this very much.
We shared an Indian dinner with our friends.
Along with the Aloo Gobhi we had Tadka tomatoe dal (lentils),
fresh cucumbers, steamed broccoli, rice and chicken.
The chicken was my own recipe.
First I marinated chicken thighs in:
1/2 cup orange lime juice
1/4 cup olive oil
1 Tablespoon ginger paste
4-5 cloves garlic minced.
The next day, I cooked it in 2 Tablespoons olive oil.
Season with salt and pepper
Then serve on rice.
I cooked and served all week end! What fun!
